It is unfortunate that the Holstein price has not recovered. The wider spread appears to be the new normal. I hope the spread does not increase.
I read an article some time ago (I think I posted a link to it on this website.) about the meat quality of Holsteins vs. other breeds. I was surprised as to how comparable the meat was. I do not know how much additional cost the packers incur over the larger frame size, but I suspect that the Holsteins may be some of the most profitable animals for them.

Their meat quality is excellent because they are on a full feed of grain from the time they are born until they reach 1400 -1600 lbs. Marbling is excellent.
