Wagyu Beef

A few weeks ago, I saw Wagyu Beef on the menu of a restaurant where I was eating. Having heard of Wagyu, primarily the excellent flavor of the meat and the unattractive appearance of the cattle, I decided to try it.

 

I was there early in the afternoon and the restaurant had already sold out of several of the Wagyu options; however, their Wagyu beef stir fry was still available. I ordered the Wagyu stir fry and thoroughly enjoyed it. The meat was well cooked and the flavor was excellent. I would definitely order it again.

 

So, what are your opinions of Wagyu?

Maybe get after it.  They and the Aukauskls definitely bring $25 to 100cwt live premiums.

I am not familiar with the breed that you mentioned.  I do think that it would be interesting to try feeding out some Wagyu cattle, although I have heard that it takes considerably longer to feed them out.  I also think that trying to market them might be a problem.  

 

While I really enjoyed eating the Wagyu beef, we will most likely continue to source and feed out the Angus type cattle.

Part of the Wagyu mystique is they get fed beer and hand rubbed down in their stalls.  Old Japanese farmers may do that but not me.  I'll drink the beer and put them on pasture.  🙂  

 

I thought there was a place in Sioux Center, IA that was doing embryo transplant with them?

I think that Wagyu may be growing in popularity here in the USA.  At least I know I am hearing more about them.  

 

If a person has a lot of back pasture where they can hide ugly cattle, and plenty of time to figure out how to market them; they are probably quite profitable.  

 

The American Wagyu Association has a very nice website; however, I think that it is funny that even they appear to be very aware of how ugly Wagyu cattle are as the main website picture is of a beautiful pasture with low lighting that shows a herd of Wagyu cattle in the distance.  Even in this beautiful setting it is still obvious that the cattle are ugly.  I did not find any other photos of the cattle, although there are several nice photos of Wagyu meat.  The association obviously knows what sells.

Just raise calves/yearlings for say agri beef.  They feed 10s of 1000s of wag x Angus cattle. Pay good premiums for calves etc....generally $100cwt over par.

I am not familiar with agri beef, but it sounds interesting, I would be interested in learning more about it if you are willing to share.

 

Also, where can Wagyu/Angus cross feeders be purchased?

Bob rebholts started it back in the 70's,  Was just a cow deal and feedyard then.  Kinda modeled after j r Simplot.  Base in Idaho is magic valley. Still run 20k head of cows....got another 1000 ranches that raise feeder cattle for em.   Www.agribeef.com.  heck give em a call.    Saw em buy 1100 wag x Angus weighed 425 Nice set of calves at $425cwt.  I thought it was a wonderful price.
