Wheat diagnostics

I'm about to finish my PhD in biophysics, and because my last years I spent working on very abstract topics, I would like to do something more useful for people. My aim is to develop sensors and software helping farmers with plants diagnostics. At this moment my main focus is on wheat. I would like to learn, what are the biggest challenges/issues during plant's growth? What are the symptoms most challenging to diagnose (nutrient deficiencies/pathogen attacks)? What information about the physiological state of wheat would be most useful for you? What is the decision tree during diagnostics? Do you use any specific diagnostic methods besides organoleptic or diagnostic keys? What keys do you usually use? How often do you consult specialists?

I would be extremely grateful for any help. I know, those are very broad questions, but any help would be useful.
