Re: School Business Project!

I'd bet NC Choice has a program to get veggies farms to comply with FDA's new rules.  USDA doesn't regulate produce.  Most of the sustainable ag conferences do food safety certification now days.  And you are absolutely correct that they are a huge ordeal in both time and money.  We have a very small food business.  I figure at least 3750 hours per year just in regulatory compliance.  I could see how we could easily allocate (but not afford)15000 hours for keeping USDA happy, QA work, and production record keeping.

Re: School Business Project!

Which is precisely why a huge corporation can afford regulation so much more easily than individual farms and families. Your time budget is roughly two 40- hour employees per week each year, at present levels of interfacing with agency requirements. Or, more likely, one person has eighty-hour weeks every week. That gets old.
