I am finally logged back in w/a new pw etc. We've had a little snow/sleet and wind, thankfully Jerry is home and I don't have to get out in it by myself! Sp made coconut cream pie today....it was wonderful, Cale bribed him by suggesting that Sp make a pie just for him and if so he would feed the show calves, done deal. C has eaten 1/2 of his pie and it is only 5:15

Sounds yummy. That's my favorite but since no one else likes it, I rarely make it.

Local restaurant is pretty well know for its pies. They tell me they sell more Coconut than any other variety.

Here in the South, a coconut pie is more often coconut custard. Rich, creamy custard base with the coconut toasted golden brown, risen to the top...heavenly!
I have tried an online recipe for " impossible" coconut pie, which is mixed in a blender, and makes its own crust as it bakes...easy and YUMMY!
