What to do with almonds?

I came home from Thanksgiving with a giant bag of whole almonds from my MIL. I love just eating them right out of the bag, but thought it would be a good idea to actually make something with them. I was thinking maybe candied almonds, and maybe put some in chex mix. 

 

Do you have any recipes using almonds? Please share ... looking forward to trying something new!

Maybe you could make a sweet bread that uses almond paste for a filling....almond paste is ground almonds with confectioners sugar, vanilla, and egg white (there are recipes online).  I believe that "Challa" (sp) is a Hebrew sweet bread that you could use it in...I don't think it is very hard to make but is delicious.

Whenever I have an ingredient and need a way to se it, I generally open Mark Bittmann's " How to Cook Everything". Starting to more and more default to Google for recipes...there are millions of them out there. Almost anything Mike asks me to find a recipe for can come from one of those two sources, too. Lots of these have several variations and you can find substitutions easily.

If you want to save them for use further in the future, store them in the freezer. Keeps them from becoming rancid.
